A chunky Tex-Mex dip made with black beans, corn, and fresh vegetables, perfect for parties or snacking.

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine black beans, corn, bell pepper, red onion, avocado, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and black pepper.
  3. Pour the dressing over the vegetable mixture and gently toss to combine.
  4. Cover and refrigerate for at least 30 minutes before serving.
  5. Serve with tortilla chips or as a topping for tacos.

Notes

  • For extra spice, add diced jalapeño.
  • Store leftovers in an airtight container for up to 3 days.
  • Dice avocado just before serving to prevent browning.
