1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
3 ripe bananas, mashed
3/4 cup sugar
1/3 cup melted butter
1 egg
1 tsp vanilla extract
1/2 cup sour cream
1/2 cup brown sugar (for topping)
1 tsp cinnamon (for topping)
Instructions
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
In a bowl, mix flour, baking soda, and salt.
In another bowl, mash bananas and mix with sugar, melted butter, egg, and vanilla.
Combine wet and dry ingredients, then fold in sour cream.
Fill muffin cups 2/3 full with batter.
Mix brown sugar and cinnamon, then sprinkle over each muffin.
Bake for 20-25 minutes or until a toothpick comes out clean.
