Soft and chewy blueberry cookies made with fresh blueberries for a delicious summer treat.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. Gently fold in the blueberries.
  7. Drop tablespoon-sized dough onto the baking sheet, spacing them 2 inches apart.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Do not overmix the dough to keep cookies soft.
  • Use fresh blueberries for best results.
  • Store in an airtight container for up to 3 days.
