Ingredients

  • li>2 cups granulated sugar

  • 1 tablespoon lemon juice
  • 1 packet (1.75 oz) powdered pectin

Instructions

  1. Wash and drain the black raspberries.
  2. Crush the berries in a large pot using a potato masher.
  3. Add lemon juice and pectin, stirring well.
  4. Bring the mixture to a full boil over high heat.
  5. Add sugar and stir until dissolved.
  6. Return to a boil and cook for 1 minute.
  7. Remove from heat and skim off any foam.
  8. Ladle the hot jam into sterilized jars, leaving 1/4-inch headspace.
  9. Process jars in a boiling water bath for 10 minutes.
  10. Let cool and check seals before storing.

  • Use fresh, ripe black raspberries for best results.
  • Adjust sugar to taste if berries are very sweet or tart.
  • Sterilize jars and lids before filling.
