  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/4 cup BBQ sauce, plus extra for serving
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 red bell pepper, chopped
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 4 cups mixed greens
  • 1/4 cup red onion, thinly sliced

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. In a bowl, mix chicken with olive oil, smoked paprika, garlic powder, salt, and black pepper.
  3. Thread chicken onto skewers and brush with BBQ sauce.
  4. Grill skewers for 4-5 minutes per side, until fully cooked.
  5. Remove chicken from skewers and let rest for 2 minutes.
  6. Toss mixed greens, bell pepper, cucumber, cherry tomatoes, and red onion in a large bowl.
  7. Top salad with grilled chicken and drizzle with extra BBQ sauce.
  8. Serve immediately.
