Delicious banana streusel muffins that are easy to make and perfect for breakfast or a snack. These muffins are moist, flavorful, and topped with a crunchy streusel for extra texture.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts (optional)
  • For the streusel topping: 1/4 cup flour, 1/4 cup brown sugar, 2 tbsp cold butter, 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix mashed bananas, granulated sugar, brown sugar, melted butter, egg, and vanilla extract.
  4. Combine the wet and dry ingredients, stirring until just mixed. Fold in walnuts if using.
  5. For the streusel, mix flour, brown sugar, and cinnamon. Cut in cold butter until crumbly.
  6. Fill muffin cups 3/4 full. Sprinkle streusel topping over each.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

  • Use very ripe bananas for the best flavor.
  • Do not overmix the batter to keep muffins tender.
  • Store in an airtight container for up to 3 days.
